The beans are immersed in water in this process, forming a solution that draws out the soluble elements while preserving the natural flavors. With carbon filters, caffeine is selectively removed, leaving behind a concentrated solution called Green Coffee Extract (GCE). Decaffeination occurs when the GCE and green coffee beans interact, allowing the caffeine to migrate from the beans to the GCE.
